These muffins are spectacular. They are moist and have pieces of banana and bursts of blueberry and…………….just yum!
Let the sweet adventure begin!
Put 1 1/2 cups all-purpose flour in a medium bowl,
then add 1 teaspoon baking soda,
1 teaspoon salt,
1/2 teaspoon baking powder,
1/2 teaspoon nutmeg,
and 1/2 teaspoon cinnamon.
Whisk together. Set aside.
In a large bowl add 1 cup sugar
with 1/2 cup vegetable oil,
2 large eggs, beaten,
and 2 teaspoons vanilla.
Whisk until blended.
Stir in 2 ripe mashed bananas and
1 cup blueberries.
Add the dry ingredients and stir gently with the spatula until just combined.
Spoon into 12 cup muffin tin.
Bake in preheated 350 degree oven for 20-25 minutes.
Remove from tin and cool on wire rack.
Servings: 12 muffins
